we’ve partnered with chef gabe erales and the non-profit oído, an organization dedicated to empowering young leaders through food, education, and community. their home base, casa hope, is a student center in mexico that’s changing lives through culinary mentorship, cultural programming, and immersive learning experiences.
chef gabe created the pulpo al pastor taco—a dish rooted in yucatán, where octopus (pulpo maya) is a regional staple and the al pastor flavors reflect the cultural migration that shaped the area’s food history.
